Chocolate cookies with chocolate Pepita:

Water g 50-70

CACAO POWDER g 90
PEPITA CHOCOLATE g 150
Mix all the ingredients in a planetary mixer equipped with paddle attachment at low speed for about 2 minutes. Using dough, form some cylinders of 3-4 cm diameter, wrapp them in parchment paper and place in refrigerator for at least 2 hours. After completed cooling, cut some discs of 1 cm thick. Bake at 200°C for about 10-12 minutes.
WARNING: the Pepita Chocolate may be replaced by chopped hazelnuts, almonds, etc.
