CRÈME BRULÉE allows you to prepare one of the most highly appreciated creamy desserts in a practical and quick way. By adding only milk and cream, you can make an incomparably delicious Crème Brulée.
The same base can be also used to create a variety of genuinely tasty desserts, such as "Crema Catalana".
BASIC RECIPE:
CRÈME BRULÉE 70 g
Milk 250 g
Cream 200 g
Stir the mix into a small part of the milk (about 100 g). Add the remaining milk and the cream, then bring to a light boiling point, while stirring frequently.
Pour into heat-resistant moulds and leave in the refrigerator for 2 hours. Just before serving, sprinkle the surface with brown sugar and caramelize with a flame.
Catalana
CATALANA CREAM:
CREME BRULEE MIX g 80
Milk g 200
Cream (35% fat) g 250
JOYPASTE ORANGE g 10
JOYPASTE CINNAMON g 6-8
Stir the mix with a small portion of milk (about 100 g). Complete with the remaining milk and cream, then bring to gently boil, keeping stirring. Add the two Joypastes. Pour into ceramic moulds and leave in refrigerator for 2 hours.
Just before serving, dusting the surface with brown sugar and caramelize with a flame torch. Decorate with a bubble sugar, and serve with FRUTTIDOR ORANGE and cinnamon stick.
